Copperworks is located in a historic building in the heart of Seattle’s downtown waterfront. The distillery focuses on creating premium spirits that can stand impressively on their own or serve as a delicious base for new and classic cocktails. All of Copperworks spirits are distilled from premium malted barley, primarily grown in Washington State, and the distillation process takes place in its four traditional (and incredibly beautiful) Scottish copper stills. Copperworks’ gin, vodka, and all-malt whiskey are aged in charred, new American Oak barrels.
The Patsy Collins
Named for Pricilla "Patsy" Bullitt Collins, the Stimson’s granddaughter who gifted the Stimson-Green Mansion to the Washington Trust in 2001. The cocktail takes its inspiration from the Collins, and the rarely heard of Patsy Cocktail, which features vodka and apple juice.
Here's the recipe for the specially designed “Patsy” cocktail from Copperworks Distilling Company that we will be serving at Vintage Washington on September 15
- 2 oz Copperworks New Barrel Gin
- 0.75 oz Copperworks Vodka
- 0.75 oz fresh lemon juice
- 0.25 oz sugar syrup (2:1 sugar to water)
- 0.5 oz natural apple juice
- dash Scrappy's aromatic bitters
- 2 oz soda water
Combine all ingredients except the soda water into a cocktail shaker, fill with ice, and shake until cold and diluted (about 15 seconds). Strain into a Collins glass filled with cube ice. Top with 2 oz soda water. Garnish with a peach slice ("Peach" was the name Patsy's parents called her). Serve with a straw.
Smooth and rich, with a hint of its malted barley base
Copperworks Vodka offers something different. Its base of premium malted barley grown in Washington State, gives it a subtle and distinctive barley essence and a soft, round mouth feel with naturally occurring notes of vanilla. It works equally well in a vodka-forward cocktail, like a vodka martini, and in cocktails where the vodka takes a backseat to other flavors.
Our vodka starts as a craft beer and is first distilled in a traditional copper wash still, hand-built for Copperworks in Scotland. It is then further purified in another custom-built Scottish still—this time a 25-plate copper column still. The result is a distinctive vodka that has a touch of sweetness and smooth, rich finish.
Copperworks New Barrel Gin
Gin aged in New American Oak
Copperworks New Barrel Gin is aged for roughly three months in charred, new American Oak barrels—the same barrels we use to age our single malt whiskey. Aging has softened the juniper, brought forward the cinnamon, coriander and floral notes, and added the distinctive essence of vanilla and caramel from the barrel.
Like all Copperworks gins, our New Barrel Gin is distilled from a base of malted barley grown in Washington State, with ten botanicals added in the final distillation.
Heritage Distilling Company (HDC) is located in Gig Harbor, Washington and makes vodkas, gins, and whiskeys. HDC is the most awarded craft distillery 3 years in a row by the American Distilling Institute.
The Seneca Sour
- 2 oz Heritage Distilling Batch No. 12 Bourbon
- 0.5 oz Lemon Juice
- 0.5 oz Orange Juice
- 1 tsp Grenadine
- Marachino Cherry to garnish
Combine all ingredients into a cocktail shaker, fill with ice, and shake until cold and diluted (about 15 seconds). Strain into a martini glass. Garnish with a cherry.
Heritage Distilling Batch No. 12 Bourbon
It took 12 attempts to get the recipe right for Batch No. 12. Practice makes perfect. BATCH NO. 12 Bourbon is produced and bottled at 92 proof from a mash bill of 65% corn, 30% rye and 5% malted barley. Batch No. 12 Bourbon boasts notes of honey, caramel, walnut, oak and berries. Incredibly smooth for such a high proof whiskey.
Barreled at less than 125 proof for <2 years in new American Oak Charred Barrels, then cut to 92 proof using our private crystal clear water source.
Flavor Profile: sweet, but with some heat behind it, with notes of vanilla, rich plantains, and caramel and incredibly smooth for 92 proof. (46% ABV/92 Proof)
